My findings so far:

The short of it: It’s a 10.3.5 client problem, NOT a server issue and it can be remedied by using the “Name and password text fields” display option for the login window in Workgroup Manager.

I’m still not happy with this setup, though, as this isn’t what I had before (and what I had before worked VERY well for my purposes).
