Two Mail Questions

I’ve been hosting my own mail for a while now, but I’m about to start hosting mail and web sites for other people. And I’m still a little shady about the exact details. When you create a user, which becomes their email address, their long name or their shortname?
Also, is there an easy way to have two users at two different domains? For instance, me.at.johnmasone.com and me.at.fellsbiker.com? User workgroup admin or whatever its called, you can only make one me, and me.at.anydomain on the server will go to that account, correct?

as far as user names go, i do it like this.

[email protected]

username: johndoe.domain.com
short: johndoedomaincom
