I have a teacher that would like to be able to have his students open MP3 files automatically in Quicktime when double-clicked, and not in iTunes. Is there a global way in Workgroup Manager (or using ARD) to tell the computers to do this instead of the students choosing “Open With…” or changing the file associations in Get Info?

you can manage the com.apple.LaunchServices plist
in my experience it hasn’t worked all that well, but maybe you’ll have better luck than me.
