I searched around, but can’t find much on it. How can I customize the login screen? I know that on first boot, the login screen displays the account and once restarted will prompt for username and password (with or w/o firstboot). With firstboot, I believe you can change this, but I’m not sure how. I’d like for the login screen to display the user accounts on the computer. Ideally, I’d like it to display all user accounts except one account (Administrator) which only techs would be able to get access to by clicking on “Other” in the login screen.

It will show a list of users by default. You must change it to do names and passwords. As far as hiding the admin account, I believe you can hide it from the login window if it is above a specific UID. I think the createUser documentation might have more on that. I would look into that and just remove anything from firstboot that has to do with loginwindow and see what happens.
