    What do you think? What is the better way of managing user data, such as home directories, etc.

    Wow, this is a broad question. It really depends on how many users you’re going to host and what they are doing. I think Apple recommends no more than 150 AFP users per server. If those users are working with large files, then obviously you’ll to want to distribute the load to as many servers as you can so the users don’t feel any major slow downs. However, if they are working with large files it might be better to turn on Mobile Accounts so a copy of their home directory is cached locally and then synchronized/pushed to the server in the background or at login/logout. In that case, you could host more users on one server.
