what is ideal setup for servername / dns / appletalk names?

hi all, i admin a server which is currently running osx10.1.5server we have just dragged together the cash and placed our order for 10.3server. i am taking this chance (installing 10.3) to trash everything and start from scratch since there are a number of areas where i'm not sure the current server is setup correctly. but, so that i don't make the same mistakes in setting the new 10.3 software i'd like to ask for some help ! the server needs to: host several websites on with different domain names and in some cases different ip's. run various services for those sites: mysql, php, perl (may need more / others in the future). run an afp and ftp file server on both the local network and on the 'net (with appletalk on for older local network clients). run quicktime streaming server. run apple mail server. run vnc (via ssh). okay, not too much to ask ?! the setup problems i have are todo with the various server names. this is how i the various names are setup at the moment: hostname: (as reported by hostname command in terminal) localhost Network Identity, Computer Name: (in sharing pane) photography (^ name wanted for afp on local network) dns names for various websites: setup in 'configure web service' pane in server admin app. does this look 'correct' to you ? is it fine leaving the hostname as localhost ? or should i pick one of the web address's as a 'primary' address and use that as the server name ? will this setup cause problems with a mailserver or any other service i may wish to run in the future ? currently this server is not acting as a netinfo domain, in the future if i were to need this functionality would the hostname need to be something other than localhost ? how do other people have their servernames setup? thanks in advance, alex.
