Start Postfix & Cyrus

Hi, I am running an OS X (10.3.3) Server. I installed Spamassassin the other day, following the steps outlined in http://developer.apple.com/server/fighting_spam.html. I can't use ServerAdmin anymore to start mail (discussed in the article) so how do I start mail? Cyrus and Postfix that is. I tried sudo postfix start... it says that it is running but I can't send mail through the server (the connection is denied). I don't even know where to look on starting Cyrus.. Thanks very much, S
