Set headless server to higher than 1024×768

We have a few Xserves that run headless, and when you remote into them the supported resolutions are 640x480 - 1024x768. Is there any way you can set it to something higher, without physically connecting a monitor? We need to run Instruments on one of them, and 1920x1200 would help a lot.
