Migration

What would be the safest way to migrate mail from a Sendmail and Exchange server over to a new Postfix server? User accounts are identicle for all three servers. I just need the mail off the two old servers to be on the new Postfix one. Would user's address books be salvageable too? Thanks for your time. - Rich
