Making Quicktime the default player instead of iTunes?

I have a teacher that would like to be able to have his students open MP3 files automatically in Quicktime when double-clicked, and not in iTunes. Is there a global way in Workgroup Manager (or using ARD) to tell the computers to do this instead of the students choosing "Open With..." or changing the file associations in Get Info?
