DNS made easy?

I do not wish to use my host's DNS servers to host my site and mail servers. I do not know much about DNS. Is there a tutorial or any information you can give on how to setup DNS in 10.3? It only needs to be simple enough to run my web and mail services as I am hosting myself of a T1 line. Any help?
